Because nothing says “Austin” like tequila, Topo Chico, and waking up wondering where your debit card went.

There are two things Austinites will argue about forever:

  1. The best breakfast taco spot.
  2. Whether Ranch Water is actually “just tequila Topo and lime.”

For our very first Drink of the Week, we had to pick something that screams Austin louder than a guy in cowboy boots riding an electric scooter down Rainey Street at 1:14 a.m.

This Week’s Pick: The Spicy Ranch Water 🌶️

The Ranch Water is basically the unofficial state beverage of people who say:

“I’m not trying to get too drunk tonight.”

…and then accidentally stay out until 2 a.m.

It’s crisp. It’s refreshing. It feels healthier than it probably is. And the spicy version adds just enough chaos to make things interesting.

We picked this drink because:

  • It’s peak Austin energy
  • It’s easy to make
  • It works at rooftops, tailgates, lake days, and backyard hangs
  • And unlike sugary cocktails, it won’t immediately make your teeth feel like drywall

Also, let’s be honest:
Anything involving Topo Chico automatically gains +10 charisma points in Texas.


How to Make It

Ingredients

  • 2 oz tequila blanco
  • Juice from 1 lime
  • Topo Chico mineral water
  • 2–3 jalapeño slices
  • Tajín for the rim
  • Ice

Optional Add-Ons

  • Splash of agave syrup if you want it smoother
  • Cucumber slices for “I do yoga now” vibes
  • Extra jalapeños if your decisions are already questionable

Instructions

  1. Rim your glass with lime juice and Tajín.
  2. Add ice.
  3. Throw in jalapeño slices.
  4. Pour tequila and fresh lime juice over the ice.
  5. Top with chilled Topo Chico.
  6. Stir lightly.
  7. Pretend you’re only having one.

A Little Ranch Water History

Despite sounding like something a cowboy made in a gas station parking lot, Ranch Water has deep Texas roots. Most people trace the drink back to West Texas, where ranchers and locals wanted something cold, simple, and dangerously easy to drink in the brutal desert heat. The original recipe was about as Texas as it gets: tequila, lime, and mineral water — usually straight from an ice-cold bottle of Topo Chico.

Over time, Ranch Water evolved from a low-key regional drink into a full-blown Texas personality trait. You’ll now find it everywhere from Austin rooftops and lake parties to tailgates and backyard cookouts. The spicy version came later because apparently Texans looked at tequila and carbonation and thought:

“You know what this needs? Jalapeños.”
